Main Dishes - Breakfast


Breakfast for dinner!  People either love it or hate it.  I love to mix it up and ask friends if they'd like me to bring breakfast for dinner.  Most people seem to think it would be great to switch things up in the midst of receiving multiple pastas, casseroles, chilis, etc.  I often bring "brinner" with fresh fruit, homemade caramel rolls and juice instead of a salad, veggie and bread like I would a regular meal.


Creme Brulee French Toast


This is as decadent as it sounds.  My sister-in-law Carol first made this for us for some family gathering and it was so amazing!  Since it needs to sit in the fridge overnight and you're making this as a dinner meal, make this first thing in the morning and let it sit all day long, then bake right before dinner so you can bring it to your friends right out of the oven.

Ingredients:
1/2 c. butter
1 c. packed brown sugar
2 T. corn syrup
Thick sliced French bread, about 6 slices
5 eggs
1 1/2 c. half-and-half
1 t. vanilla
1 t. Gran Marnier, orange liqueur
1/4 t. salt

Preparation:
Melt butter in a saucepan over medium heat.  Add brown sugar and corn syrup.  Stir until sugar is dissolved.  Pour into a 9x13 baking dish.  Remove crust from bread and arrange in the baking dish in a single layer.  In a small bowl, whisk together eggs, half-and-half, vanilla, liqueur and salt.  Pour over the bread.  Cover and chill overnight, at least 8 hours.  Bring dish to room temperature before baking.  Bake dish at 350 degrees for 35-40 minutes until light brown.

Serve with fresh fruit and your favorite syrup, although it doesn't need much syrup because the bottom is sweet.  Whipped cream would be a fun topping.



Cheesy Tatertot Egg Hot Dish



This one is so simple, you'll be tempted to add extra stuff in this hot dish to mix it up.  Word of advice:  Don't.  It's so perfect in it's simplicity.  Maybe have bowls of "extras" on the side.  Extras include anything you like in an omelet like green chilis, mushrooms, onions, sour cream, salsa, etc.  But we like this one totally plain.  Totally yummy.  Note:  This breakfast dish is not made the night before like many breakfast egg dishes, but it is quick to throw together.

Ingredients:
1 pound bacon, diced
32 oz. package tatertots
12 eggs
1/2 c. milk
1 pinch salt
1/8 t. pepper
2 c. cheddar cheese, shredded

Preparation:
Dice the bacon and cook in a skillet until done.  Drain on paper towels, then lay crumbled bacon in the bottom of a greased 9x13 pan.  Spread tatertots on top of bacon.

In a bowl, whisk together eggs, milk, salt and pepper.  Pour eggs over tatertots.  Top with cheese.

Bake at 350 for an hour and 10 minutes.  Eggs will be firm when done.


Janet's Egg and Bagel Bake

Ingredients:
1 pound bacon, cooked, crumbled (may substitute ham)
2-3 T. diced onion
10 oz chopped spinach or fresh broccoli (my broccoli fiends boys prefer broccoli)
1 c. Swiss cheese or cheddar, shredded
4 eggs
1 c. cream
Salt & Pepper
Nutmeg or dry mustard
Parmesan cheese
1 Deep dish frozen pie shell

Preparation:
In the bottom of frozen pie shell layer bacon or ham.  Add onion, spinach or broccoli.  Add cheese.  In a small bowl whisk together eggs, cream, salt, pepper, and spice to taste.  Pour into pie shell.  Sprinkle with parmesan cheese.  Bake 1 hour or less at 350 degrees.


Easy Caramel Rolls
Since I mention these all the time, I'd best give you the recipe for these simple, delicious, sticky buns.  My mom has made these since I was a kid and they are so yummy.

Ingredients:

For Rolls:
1 loaf Rhodes frozen bread dough
Butter
Cinnamon
Sugar (white or brown)

Thaw the bread dough.  When soft and workable, roll out on a floured surface into a rectangle.  Spread generously with butter.  Cover surface of dough with sugar and sprinkle with cinnamon.  Roll the rectangle and cut into 1/2-inch pieces.  Set aside while you make the caramel.

For Caramel:
1/2 c. brown sugar
1/4 c. butter
1/4 c. half & half (can use milk or cream, but it will change the consistency)
1 t. vanilla

In a sauce pan over medium heat, melt butter, brown sugar and half and half.  Bring to a  boil and cook for 5-7 minutes.  Caramel will be done when you drop a small amount into a cup of cool water and you can form it into a soft ball.  Remove from heat, stir in vanilla.  Pour caramel into a greased pie plate.  While caramel is warm, add your sliced rolls that you had set aside.  No need to crowd them together.  Give them space to rise.  Cover with plastic wrap and refrigerate overnight.

In the morning, remove plastic wrap and bake at 350 for 20-25 minutes.  Flip warm rolls onto a plate, being very careful because the caramel will be super hot.  Serve warm.
