Admittedly, I don't make a lot of beef, unless it's ground beef. Steaks are expensive! I'll make a crockpot roast though. But those are for the crockpot page. Here are some of my favorite beef dishes.
General Tso's Meatballs
This was a total Pinterest hack because I didn't have all the ingredients needed in the original recipe I pinned. Plus, any meatball is going to need salt and pepper, so I added that too. I doubt I'd do anything differently next time. My husband really liked these!
Ingredients:
For the meatballs:
1 1/2 pounds ground beef
1 t. ground ginger
1/2 c. green onions, chopped fine
2 t. garlic powder
1/2 c. flour
1 egg
1 t. salt
1/2 t. pepper
Oil for frying
Mix the beef, ginger, green onions, garlic powder, flour, egg, salt and pepper until well combined. Roll into 1-inch balls. Fry in oil until browned on all sides. Transfer to a baking dish and bake at 350 for 10 minutes or until cooked through.
For the sauce:
1 t. sesame oil
6 T. rice wine vinegar
6 T. soy sauce
3 T. oyster sauce
1/2 c. water
6 T. sugar
1 t. corn starch
1/2 c. green onions, chopped fine
6 dried chilis (4 whole, 2 chopped fine)
Extra corn starch, if desired
In a small saucepan over medium heat, combine sesame oil, vinegar, soy sauce, oyster sauce, water, sugar, 1 t. corn starch, green onions, 4 whole dried chilis and 2 dried chilis chopped fine. Mix thoroughly and bring to a boil. Then reduce heat to a simmer for 15-20 minutes to allow flavors to blend. Remove 4 whole chilis. If you like a thicker sauce, mix some extra corn starch in cold water and blend well. Add slowly to sauce and increase the heat until you reach your desired thickness.
Serve meatballs over white rice and spoon sauce on top.
