Cookies


Since I was a kid I have always enjoyed baking more than cooking.  I'd say that my love of cooking has increased by far in the last 10 years or so, but baking is still my favorite.  I just don't do it as much or I'd eat it all and I'd have more weight to lose.


Ginger Snaps
A favorite recipe of mine since forever.  This came from a Minnesota church cookbook that my mom had when I was a little girl.  There is nothing better than a church cookbook in my opinion.  Find one at a garage sale and be sure to pick it up and I guarantee it won't disappoint.  These cookies are soft and chewy and spicy and yummy and good and....perfect!

Ingredients:
1 c. sugar, plus extra for rolling cookies
3/4 c. margarine (I never use butter in this recipe)
1 egg
4 T. molasses
2 t. baking soda
1 t. cinnamon
1 t. ground cloves
1 t. ground ginger
2 c. flour

Preparation:
Cream together 1 c. sugar and margarine.  Add egg.  Add molasses.  Add baking soda and all spices.  Add flour a little at time.  Scoop cookies, rolling dough into balls.  [Note:  If dough is too sticky to roll into balls, refrigerate it for  a while to firm up.]  Roll balls into sugar.  Place onto prepared baking sheet.  Bake 10-11 minutes at 375 degrees.



Butterfinger Cookies
My friend Mary makes these at Christmastime, but I say they are good any time of year.  I am not responsible for any weight gain these may will cause.  You may will eat more cookie dough than actual cookies (insert the disclaimer that eating raw eggs in cookie dough can make you ill, threaten your life - blah, blah, blah).

Ingredients:
1 c. sugar
1 1/3 c. dark brown sugar
1 stick butter
4 eggs
2 1/2 c. peanut butter (creamy or chunky, your choice)
3 t. vanilla
2 c. flour
1/2 t. salt
1 t. baking soda
20 oz. Butterfingers candy bars (you can use the BB's or buy the bars and chop them up)

Preparation:
Cream together the butter and both sugars.  Add eggs and vanilla.  Add peanut butter.  Add flour, baking soda and salt.  Then add the chopped Butterfingers.  Mix well.  Roll into 1-inch balls and place on baking sheet.  Bake for 7-9 minutes at 350 degrees.  I like to let them cool half-way on the cookie sheet before removing to a wire rack.




Chewy Sugar Cookies
I prefer cookies soft as opposed to crispy.  Can you tell?  You may never see a crispy cookie recipe on my site ever.  Sometimes I just don't crave the chocolate (wait, who said that?) but still want something sweet after dinner.  These are oh so good!

Ingredients:
1 c. butter, softened
1 1/2 c. sugar, plus extra for rolling cookies
1 egg
3-4 T. buttermilk
1 t. baking soda
1/2 t. baking powder
1 t. vanilla
2 3/4 c. flour

Preparation:
Cream together butter and 1 1/2 c. sugar.  Add egg and buttermilk.  Add baking soda, baking powder and vanilla.  Add flour.  Scoop cookies and roll into balls.  Roll balls into sugar.  Place onto prepared baking sheet.  Bake 8-10 minutes at 375 degrees.
